Mediterranean vegetables
Mediterranean vegetables is a loose grouping of vegetables which have some association with the mediterranean area. Typical vegetables include:
- Capsicum (or bell peppers)
- Pumpkin
- Eggplant (or Aubergine)
- Rutabaga (or Swede or Turnip)
- Sweet potato
- Zucchini (or Courgette)
- Onion
- Okra
- Olive
- Chickpea
Preparation
The most common methods of preparation are roasting and grilling.
